CUPCAKES | VALENTINE’S DAY

Lately I’ve been getting into baking. I’ve been having so much fun cooking scones, cupcakes and other little treats – and Matt doesn’t seem to be minding my new hobby either!

Yesterday I found the cutest little polka dot cupcake papers at spotlight. These little cupcake papers sparked a bake-fest that eventually took over our entire kitchen and living area.

Yes, I really got into it this time! Hours were spent tying little bows around each cupcake, adding sprinkles, plus hearts and maltesers for effect. At the end of it all, we were left with over 50 cupcakes, and even Matt can’t eat that many!

So today (being Valentine’s Day) I decided to spread the love and deliver lots of cupcakes to my family and friends.

I’m really enjoying my new hobby, I just hope others don’t get sick of me …

I decided to share the recipes, maybe some of you will want to make them for yourself. They are really easy to make (seriously easy), if I can make them – I’m sure you can!

White Chocolate Mud Cakes
125g butter, chopped coarsely
80g white eating chocolate (I used Cadbury Dream – Yum!)
1 cup (200g) caster sugar
1/2 cup (125ml) milk
1/2 cup (75g) plain flour
1/2 cup (75g) self-raising flour
1 egg

1. Preheat oven to 170C/150C fan-forced. Line muffin pan with paper cases.
2. Stir butter, chocolate, sugar and milk in small saucepan over low heat until smooth.
Transfer mixture to medium bowl, cool 15 mins.
3. Whisk sifted flours into chocolate mixture, the egg.
4 Drop 1/4 mixture into cases. Bake for about 30 minutes. Stand to cool for 5 minutes before turning top-side up onto wire rack to cool.

Icing and Decorations

White chocolate Ganache
1/2 cup (125ml) cream
360g white eating chocolate, chopped coarsely

1. Bring cream to the boil in a small saucepan; remove from heat. When bubbles subside, add chocolate; stir until smooth.

Optional – Add raspberry hearts.

Milk Chocolate Cupcakes
1 cup (150g) self-raising flour
1/2 cup (75g) plain flour
1/2 cocoa powder (I used Cadbury Bournville Cocoa)
3/4 cup (165g) caster sugar
185g softened butter
3 eggs
1/2 cup (125ml) milk

Icing – White chocolate Ganache
1/2 cup (125ml) cream
360g white eating chocolate, chopped coarsely

1. Preheat oven to 180C/160C fan-forced . Line muffin pan with cupcake papers.
2. Sift dry ingredients into medium large bowl, add remaining ingredients; beat with electric mixer on low speed until ingredients are combined. Increase speed to medium, beat until mixture is smooth and has changed to a paler colour.
3. Drop 1/4 of mixture into cases. Bake about 20 minutes. Stand cakes 5 minutes before turning top-side up onto wire rack to cool.

Icing and decorations

Milk chocolate Ganache
1/2 cup (125ml) cream
200g milk eating chocolate, chopped coarsely

1. Bring cream to the boil in a small saucepan; remove from heat. When bubbles subside, add chocolate; stir until smooth.

Optional – Add maltesers and chocolate sprinkles.

NOTE – To make whipped ganache, beat the cooled mixture in a small bowl with an electric mixer.
